Ingredients:

Whole white wheat flour: 3 cups

Flax meal: 1 cup

Brown sugar: 1&1/2 cups

Walnut meal or chopped walnuts: 3/4 cup

Baking soda: 2 tsp

Salt: 1 tsp

Cinnamon & Nutmeg optional

5 large or 6 medium bananas: mashed

Canola oil: 2/3 cup

Apple sauce(unsweetened; with cinnamon OK): 3/4-1 cup

Unsweetened soy milk: enough to bring it to a cake batter consistency

Method:

Mix the first seven dry ingredients in a large bowl. Fold in the wet ingredients and bring it to the right consistency by adding soy milk. Bake for 1 hour in the center of the oven at 350 degrees F or until a toothpick inserted in the center comes out clean.
